Sometimes when you pick through the crisper drawer, it can be hard to tell if some of your produce is bad, especially heartier things like eggplant. So, how do you tell if eggplant is bad?

Unlike some other produce, it's not always apparent if an eggplant is spoiled because you might not see the visible mold like you might on a cucumber or a pepper. Here are some quick and easy indicators that your eggplant is spoiled and some ways to keep your eggplants fresher for longer.

Bad Eggplant Has Soft, Slimy Skin

The easiest way to tell if an eggplant is bad or not is to look at and feel the skin. Fresh, ripe eggplant should have dark purple skin that is shiny, firm and springy to the touch.

If the skin of the eggplant is dull, brown and squishy, the eggplant is bad. Slimy, wet skin is another indicator that the eggplant has gone bad. If there's visible mold or rotten smells, you'll know for sure that the eggplant is off.

But make sure you give your eggplant a good inspection before you pitch it you don't want to throw away an eggplant that you can still use. If the skin is a little bit soft, or just less firm than when you bought the eggplant, it's probably still good. As long as the skin isn't totally squishy, sunken or covered in brown, you're in the clear.

Luckily, if there's just one or two brown spots on the outside of the eggplant, it doesn't necessarily mean the whole eggplant is bad. You can always cut away a brown spot or two and the rest of the eggplant will be fine to cook with.

How to Tell if Cut Eggplant Is Bad

Once you cut an eggplant, it will begin to oxidize, or turn brown, as the flesh is exposed to the air. This is perfectly normal and does not mean the eggplant has gone bad.

If you have slices of eggplant that are slightly brown or tan in color but are still mostly firm and smell okay, the eggplant is fine. However, if slices of eggplant are dark brown all over and are squishy or smell rotten, those pieces eggplant are definitely bad.

How Long Does Eggplant Last?

At room temperature, whole eggplants last for 3 to 4 days. In the fridge, whole eggplants last for up to a week. Eggplants that have been cut last 3 to 4 days in the fridge.

If your eggplant is already cut, soak the cut pieces in water with a little lemon juice and salt to help keep them from turning brown. In general, though, to keep your eggplant fresher longer, don't cut it until right before you plan on cooking it.

Can You Freeze Eggplant?

Since eggplant is quite watery, it doesn't freeze well raw. When you freeze raw eggplant, all that water inside turns to ice and crushes the cell walls of the eggplant, making it mushy when you thaw it out.

To freeze eggplant, peel the skin off, cut it into cubes or large planks and toss it with a little bit of salt. Let the cut eggplant sit in the salt for about ten minutes to draw out some excess moisture.

Give the eggplant a quick rinse to get some of that salt off. Then, roast the eggplant with a little bit of oil in a 400F oven or until tender. Finally, lay the cooked eggplant into a single layer to cool, transfer it into freezer bags, and freeze.

Roasted, frozen eggplant lasts in the freezer for about a year.
