Putting blueberries into a mojito adds another layer of fresh, fruity sweetness that makes a delightful pairing with the soft white rum, tangy lime, and herbaceous bite of fresh mint. Plus, the blueberries lend a beautiful light purple hue to the drink.

This drink is especially tasty in the heat of summer when fresh blueberries are at the peak of freshness. To infuse more flavor into the cocktail, this recipe calls for making a quick simple syrup with some fresh blueberries by lightly smashing the berries with sugar, then adding in boiling water to dissolve the sugar.

Once the sugar is dissolved, throw in a few mint leaves to steep with syrup. After that, all you need to do is cool and strain the syrup, then build the mojitos as normal. For mojitos, my go to rum is Captain Morgan, but you can use any that you prefer. Enjoy!

Ingredients

For the Blueberry-Mint Simple Syrup:

  • 8-10 fresh blueberries
  • cup sugar
  • cup water
  • 5-6 mint leaves

For the Blueberry-Mint Mojitos:

  • cup fresh blueberries
  • 15-20 fresh mint leaves
  • 1 cup white rum (such as Captain Morgan)
  • cup blueberry-mint simple syrup
  • 4 limes
  • 15-20 ice cubes
  • 2 cups club soda

For the Blueberry-Mint Simple Syrup:

  • Combine the blueberries and sugar in a small container. Lightly smash the blueberries with a cocktail muddler or wooden spoon.
  • Bring the water to a boil in a small pot and pour over the blueberries and sugar. Stir to dissolve the sugar. Once the sugar is dissolved, add the mint leaves to the container and place in the fridge to cool down. After 10 minutes, strain the syrup through a fine mesh strainer and return the strained syrup to the fridge until you begin mixing the cocktail.

For the Blueberry-Mint Mojitos:

  • Combine the blueberries, mint, rum and simple syrup in a medium-sized pitcher. Cut 3 of the limes in half and squeeze them into the pitcher. Use a cocktail muddler or the end of a wooden spoon to lightly muddle the blueberries and mint into the other ingredients. Gently stir to evenly incorporate everything.
  • Cut the last lime into 4 wedges. Line 4 large glasses with ice cubes, then pour an even amount of the cocktail mixture into each glass. Float 1/2 cup club soda on top of each glass and gently stir with a long spoon. Garnish each glass with the wedges of lime. Serve chilled.

Notes

This recipe makes enough for 4 drinks, but you can always scale it down to make 1 and build the cocktail in a glass instead of a pitcher.
