Red velvet pancakes from Green Eggs CafeWe’ve all had dessert in the morning and called it “breakfast.” Entire restaurants chains are founded on the melding of the two in some sugar-crusted doughy form or another.

At Green Eggs Cafe, the fusion of early morning and after-dinner sweets takes a delightful new form in a stack of crimson, faintly chocolatey red velvet pancakes sandwiching layers of strawberry mascarpone frosting and chocolate chips. A dollop of Chantilly cream on top further blurs the already schmeared line between after-dinner treat and early morning sustenance. It’s fruitier than the traditional red velvet cake, but the contrast is welcome when you’re supposed to be waking yourself up to face the day (or at least, wake up) instead of winding down.
